Mardi Gras (französisch, wörtlich Fetter Dienstag, italienisch Martedì Grasso, englisch Fat Tuesday) ist der Tag vor Aschermittwoch. Im Französischen wird damit auch der letzte (Diens)tag vor der Fastenzeit bezeichnet.

In den südlichen Vereinigten Staaten wird die Bezeichnung Mardi Gras auch für den Höhepunkt der mehrtägigen Karnevalsveranstaltungen verwendet. Unter anderem in New Orleans, Louisiana, und Mobile, Alabama finden an diesem Tag Umzüge statt, mit denen die Karnevalsveranstaltungen enden. Aufnahmen der Veranstaltungen findet man in einigen Filmen, die in New Orleans spielen (z. B. Easy Rider). Die erste Mardi Gras Parade heutiger Art fand in New Orleans am 24. Februar 1857 statt.[1]

In der Popmusik wurde der berühmte Südstaaten-Karneval ebenfalls thematisiert: Auf einer seiner ersten Solo-LP „There Goes Rhymin’ Simon“ (1973) veröffentlichte Paul Simon unter anderem auch den Titel „Take Me To The Mardi Gras“, den er zusammen mit der in New Orleans ansässigen „Onward Brass Band“, der „Swan Silvertone Gospel Group“ und Reverend Claude Jeter einspielte.

Auch in anderen französischsprachigen oder französisch beeinflussten Gegenden wird der Ausdruck Mardi Gras für verschiedene örtliche Karnevalstraditionen verwendet.

Zusätzlich steht Mardi Gras in den USA für den „Shrouded Tuesday“ bzw. „Pancake Day“. Früher wurden an diesem Tag das gesamte Fett sowie alle Eier aufgebraucht, bevor die Fastenzeit begann.
