Ragi Ball (Kannada: ರಾಗಿ ಮುದ್ದೆ, Ragi Mudde; Telugu: Sangati) ist ein indisches Hauptgericht aus Fingerhirse (Kannada: ರಾಗಿ, Ragi). Es ist eine Spezialität des Bundesstaates Karnataka, aber auch teilweise in Andhra Pradesh zu finden.

Beschreibung

Ragi Ball ist ein tennisballgroßer Kloß aus Fingerhirsemehl. Als Beilage wird Curry oder Sambar gereicht. Eine Besonderheit stellt die Essweise von Ragi Ball dar: Es wird mit der Hand ein Stück abgetrennt, in Curry oder Sambar getaucht und ohne zu kauen heruntergeschluckt.

Herstellung

Wasser wird zum Kochen gebracht und Fingerhirsemehl eingerührt. Für 1 kg Fingerhirsemehl werden 2 l Wasser benötigt. Der Brei wird nun 10 Minuten bei geringer Wärmezufuhr gekocht. Anschließend lässt man ihn abkühlen, bis er von Hand formbar ist. Um Reis-Ragi Ball herzustellen, wird im Wasser zuvor Reis gekocht. Nach 10 Minuten Kochzeit gibt man das Fingerhirsemehl hinzu und fährt wie beschrieben fort. Für die Reis-Variante kommen auf 1 kg Mehl 3 l Wasser und 0,5 kg Reis.
