Costoletta alla milanese (häufig auch cotoletta alla milanese), das Mailänder Kotelett, gilt als Vorbild des Wiener Schnitzels. Der Überlieferung nach soll es eine Nachahmung der im Mittelalter in wohlhabenden Kreisen beliebten vergoldeten Gerichte sein.

Costolette alla milanese werden ähnlich zubereitet wie Wiener Schnitzel, doch werden beim Costoletta Kalbskoteletts von 1-1,5 cm Dicke mit Knochen oder entbeint verwendet. Sie werden zuerst in geschlagenem Ei und frisch geriebenem Paniermehl gewendet und die Panierung mit den Händen angedrückt. Dann werden sie in Butter oder Butterschmalz insgesamt fünf bis sechs Minuten goldgelb gebraten und müssen anschließend ebenso lange bei geringer Hitze zu Ende garen. Erst dann wird gesalzen. Serviert werden sie mit Zitrone, Bratkartoffeln oder Salat.

In einigen Rezepten wird dem Ei oder auch dem Paniermehl geriebener Parmesan hinzugefügt, was allerdings nicht dem ursprünglichen Rezept entspricht.
