Native Stärke

Native Stärke ist chemisch nicht modifizierte Stärke, zum Beispiel Mais-, Weizen- oder Kartoffelstärke.

Den nativen Stärken lebensmittelrechtlich gleichgestellt sind die physikalisch modifizierte Stärken (vorverkleisterte, gekochte, kaltquellende oder instantisierte Stärken).

Native Stärke enthält immer Spuren von Proteinen und Fetten.
