Pulsed Electric Fields ist ein auf dem Effekt der Elektroporation beruhendes Zellaufschlussverfahren, das in der Lebensmittel- und Bioverfahrenstechnik Anwendung findet. Bei der Behandlung werden Pulse verwendet, die durch hohe elektrische Feldstärken (> 20 kV cm-1) und kurzer Dauer (500 ns bis 4 µs) charakterisiert sind.

Mögliche Einsatzgebiete liegen in der Verbesserung von Massentransportprozessen etwa bei der Fruchtsaftgewinnung, der Trocknung pflanzlicher oder tierischer Produkte und der schonenden, nicht-thermischen Inaktivierung von Mikroorganismen.
