Saint-Hyacinthe ist eine Stadt in der kanadischen Provinz Québec. Sie wurde 1849 gegründet und liegt etwa 55 km westlich von Montreal in der Verwaltungsregion Montérégie im Süden der Provinz am Rivière Yamaska. Die Stadt hatte im Jahr 2006 55.823 Einwohner auf einer Fläche von 409,56 km². Das entspricht einer Einwohnerdichte von 136 Einw./km².
