Das Stout ist ein schwarzbraunes, röst- und/oder hopfenbitteres, obergäriges Bier mit einer ausgeprägten, cremefarbenen Schaumkrone. Es wird mit besonders stark geröstetem Gerstenmalz oder Röstgerste gebraut und ist vor allem in englischsprachigen Ländern beliebt.

Die Herkunft des Begriffs geht auf Stout Porter (also: starkes Porter) zurück, was mit der Zeit einfach auf Stout verkürzt wurde.

Das weltweit bekannteste ist das Guinness Stout aus Dublin. In Irland werden außerdem noch die Sorten Murphy's und das etwas preiswertere Beamish gebraut. Darüber hinaus gibt es Stout-Marken in den USA, im Vereinigten Königreich, in Kanada, Australien und Neuseeland. In diesen Ländern werden manchmal geschmacksverändernde Zusatzstoffe verwendet, z. B. Laktose (Milk Stout), Haferflocken (Oatmeal Stout), Kaffee (Espresso Stout), Schokolade (Chocolate Stout) und sogar Austern (Oyster Stout).

Es ist nicht mit den in Deutschland und Tschechien üblichen schwarzen und dunklen Bieren vergleichbar, da diese durch ihre Herstellung einen ganz anderen Geschmack aufweisen.
