Ein T-Bone- oder Porterhouse-Steak

Das T-Bone-Steak, wie auch das Porterhouse-Steak, wird mit Filet und Knochen aus dem flachen Roastbeef geschnitten. Die beiden sehr ähnlichen Zuschnitte unterscheiden sich hauptsächlich durch Dicke und Größe des Filet-Anteils. Beim Porterhouse-Steak ist eine Dicke von etwa 3 bis 6 cm und ein Gewicht von mehr als 600 g üblich. Der Name „T-Bone-Steak“ folgt der englischen Bezeichnung des T-förmigen Knochens. Der Name „Porterhouse-Steak“ leitet sich von der Bezeichnung britischer und amerikanischer Gasthäuser ab, in denen das Bier Porter ausgeschenkt wurde. Nach anderen Quellen wird er auf den Amerikaner Zacharias B. Porter zurückgeführt.

Da Rinderwirbelsäulen wegen des Verdachtes, durch das enthaltene Rückenmark könne BSE übertragen werden, vom Markt genommen werden mussten, waren T-Bone-Steaks und Porterhouse-Steaks in der EU von 2002 bis 2005 nicht erhältlich.[1][2][3]

Das Steak wird üblicherweise gegrillt oder gebraten. Es kommt wegen des geringen Anteils an Bindegewebe mit relativ kurzen Garzeiten aus.
