Knafeh (arabisch ‏كنافة‎) ist eine arabische Süßspeise aus einem besonderen Käse und Kadaifi.

Ursprünglich stammt die Süßspeise aus der palästinensischen Stadt Nablus. Inzwischen gehört Knafeh aber zu der gesamten arabischen Küche mit unterschiedlichen Herstellungsarten. Ebenso ist Knafeh in einigen Ländern des Balkans sowie in der Türkei bekannt.

Man unterscheidet drei verschiedene Arten der Knafeh:

  • khishneh (arabisch ‏خشنه‎), wesentliche Merkmale dieser Variante sind die nudelartigen Fäden der Kadaifi.
  • na'ama (arabisch ‏ناعمة‎), eine feine Variante unter Verwendung von Grieß.
  • mhayara (arabisch ‏محيرة‎), eine Mischung aus den beiden vorherigen Varianten.

In der Regel wird die Knafeh vor dem Servieren mit warmem Zuckersirup (sogenanntes „Ater“) überträufelt.
