Pakora (auch Bhajia, bengal. Bhaja oder südind. Bajji genannt) ist eine beliebte Zwischenmahlzeit und Beilage aus Indien und Pakistan.

Beschreibung

Pakora besteht aus einem frittierten Stück oder einer Scheibe Gemüse, Kartoffel, Pilz, Ei oder Banane. Das Gemüsestück wird zuvor roh in einen Teig aus Kichererbsenmehl und Gewürzen getaucht und anschließend etwa 2 Minuten in Öl frittiert. Bei der Wahl der Füllung eignen sich sehr viele Gemüsesorten und andere Lebensmittel. Beliebt sind Pakoras insbesondere mit Blumenkohl, Auberginen, Kürbis, Zwiebel, Kartoffel, Chili und Bananen. Auch Toastbrot wird vereinzelt verarbeitet. Oft werden Pakoras als Snacks an Straßenständen verkauft. Teilweise wird eine Soße, Ketchup oder Chutney dazu gereicht.
