Bryndzové halušky (deutsch: Brimsennocken, andere Übersetzung: Spätzle mit Brimsen) ist das Nationalgericht der Slowakei. Die Nocken (halušky) werden üblicherweise aus Kartoffelteig[1] zubereitet und gekocht und beim Servieren mit dem Brimsen (bryndza, ein Schafkäse) und oft auch mit Stücken Speck gemischt. Traditionell wird die Žinčica (ein von Schafmilch stammendes Getränk) beim Essen der Brimsennocken getrunken.

In der Ortschaft Turecká bei Banská Bystrica findet jährlich ein Brimsennocken-Festival, wo auch ein Brimsennocken-Wettessen ausgetragen wird, statt.[2][3]
