Salatsaucen werden verwendet, um Salate schmackhafter zu machen, für eine erweiterte Geschmacksnote (z. B. pikant, süss-sauer, fruchtig) und um die Zutaten miteinander zu verbinden.

Die wohl häufigste Salatsauce ist eine Mischung von Essig und Öl, franz. Vinaigrette, die nach klassischem Rezept mit weiteren Zutaten verfeinert wird und zu grünem Salat und rohen Zutaten passt.

Salatsaucen auf Joghurtbasis haben einen mildsäuerlichen Grundgeschmack, sind etwas dickflüssiger und bieten sich daher auch als Dip an.

Weitere Zutaten für Salatsaucen sind Mayonnaise als Grundmasse oder für höhere Cremigkeit, süße Sahne für samtigen, zarten und saure Sahne für säuerlichen Geschmack, Crème fraîche zum verdicken oder Buttermilch zum verdünnen.

Eine saure Note erhalten Salatsaucen durch die Zugabe von Essig, Wein oder Zitronensaft. Um einen fruchtigen Geschmack zu erhalten wird frisch gepresster Orangensaft verwendet, für fruchtig-sauer Limettensaft.

Ergänzend können hinzugegeben werden:

Salatsaucen werden auch zu Salaten mit gekochten Zutaten wie Kartoffelsalat, Nudelsalat oder Fleischsalat gereicht.

Die englische Bezeichnung Dressing (aus dem engl.: Ankleiden) setzt sich zunehmend im Sprachgebrauch durch. Insbesondere industriell gefertigte Salatsaucen, die in Flaschen oder Portionsbeuteln angeboten werden, verwenden diese Bezeichnung. Einige bekannte Dressing-Rezepte sind American Dressing, French Dressing, Ranch Dressing und Italian Dressing.
