Das Sirloin-Steak ist ein sehr großes, mageres Steak aus dem hinteren Ende des flachen Roastbeef mit Knochen, jedoch ohne Filet. Es wird vier bis sechs Zentimeter dick geschnitten und wiegt bis zu zwei Kilogramm. Es unterscheidet sich vom Rumpsteak nur durch sein Gewicht und ähnelt dem benachbarten, aber kleineren Porterhouse-Steak.

Sirloin-Steaks werden gegrillt oder langsam im Ofen gebraten, wobei pro Zentimeter Dicke zehn Minuten Bratzeit gerechnet werden. Serviert werden sie klassisch mit Gemüse oder Salat und gebackenen Kartoffeln.

Gemäß einer Legende stammt der Name vom englischen König Heinrich VIII., der das Steak Sir Loin benannt haben soll. Obwohl dieses Wortspiel mehrfach zitiert wird, geht die aktuelle Etymologie davon aus, dass Sirloin aus dem mittelfranzösischen surlonge (wörtlich: „über der Lende“) stammt. Erst seit dem 18. Jahrhundert änderte sich die Schreibweise.[1]
